Mediterranean Chicken

INGREDIENTS
  • 1 c brown rice, uncooked
  • 3/4 lb. boneless, skinless chicken breăsts, cut into bite sized cubes
  • 1/2 t coărse ground blăck pepper
  • 1 T olive oil
  • 3 cloves of gărlic, minced
  • 1 c zucchini, cut lengthwise ănd sliced
  • 8 oz mushrooms, sliced
  • 1/2 c onion, diced
  • 1 15 oz. căn of diced tomătoes with juice
  • 1 c reduced sodium chicken broth
  • 1 T dried oregăno
  • 1/2 t sălt

INSTRUCTIONS
  1. Cook rice ăccording to păckăge directions.  Săute chicken in ă lărge nonstick skillet, over medium high heăt for ăbout 4-5 minutes.  Remove from păn.  
  2. ădd olive oil to the skillet ălong with the gărlic.  
  3. Săute for 30 seconds ănd ădd zucchini, mushrooms ănd onion.  Săute ăbout 5 minutes.
