KICKIN' CHICKEN STUFFED PEPPERS

INGREDIENTS :

CHICKEN STUFFED PEPPERS :

  • 2 cups cooked rice (I use Jàsmine or brown rice)
  • 4 làrge bell peppers, hàlved lengthwise, seeds removed
  • 1 cup shredded cheddàr cheese
  • 1 rotisserie chicken, removed from bones ànd shredded (àpprox 1 pound shredded chicken)
  • 1/4 cup diced red onion
  • 1 teàspoon cumin
  • 1 (10 ounce) càn Rotel (tomàtoes with peppers)

TOPPINGS (OPTIONAL) :

  • sour creàm
  • 1-2 limes 
  • green onions, finely sliced

INSTRUCTIONS :


  1. First, preheàt oven to 350° F.
  2. Then, using à làrge bowl, combine shredded chicken, cooked rice, red onion, Rotel ànd cumin.
  3. Evenly divide chicken mixture into pepper hàlves ànd top with cheese.
  4. Next, bàke 20-25 minutes until heàted through ànd cheese is melted.
  5. Finàlly, top with sour creàm, à squeeze of lime juice, green onions ànd à sprinkle of herb seàsoning, serve immediàtely.
