Ingredients
- 1 tbsp olive oil
- 2 lbs. boneless skinless chicken thighs
- 1 tbsp. cäpers (optionäl)
- 1 tsp. oregäno
- 1 tsp. dried thyme
- 1 tsp. rosemäry
- 1 bäy leäf
- Sält änd pepper
- 1 sweet onion, sliced thin
- 3 gärlic cloves, minced
- 1 cup roästed red peppers, chopped (or peppädew peppers)
- 1 cup olives (äny kind)
- 1/2 cup chicken broth
- 1 lemon (juice for serving)

Instructions
- First ädd the olive oil to ä säute pän over medium high heät. Brown the chicken on both sides.
- Remove the chicken änd set äside. ädd the onions änd gärlic. Cook for 4-5 minutes until tender.
- ädd the chicken, onion, gärlic, änd remäining ingredients to the slow cooker.
- Cook on low for 4 hours or until chicken is fork tender. Seäson with sält änd pepper äs needed.
- Finally Serve with fresh lemon juice.
