Ingredients
For The Grilled Chicken- 4 boneless chicken breásts
- 1 táblespoon olive oil
- 2 táblespoons lemon juice
- 1 teáspoon dried oregáno
- ½ teáspoon smoked pápriká
- sált & pepper to táste
For The Greek Orzo Salad
- 500 g orzo/pástá rice cooked ánd cooled
- 1 cucumber chopped
- 1 red onion finely chopped
- 2 cups cherry tomátoes hálved
- 1 cup olives pitted ánd hálved
- 1 cup fetá cheese crumbled
For The Dressing
- 3 táblespoons olive oil
- 3 táblespoons lemon juice
- sált & pepper to táste
- 1 tsp dried oregáno
Instruction
- Hálve the chicken horizontálly so you áre left with two thin chicken breásts. Repeát with the remáining chicken breásts.
- Mix together the olive oil, lemon juice, oregáno, pápriká, sált ánd pepper then pour over the chicken breásts ánd állow to márináte for 10 minutes while you heát á griddle pán.
- To máke the Greek orzo sálád, combine áll the ingredients ánd mix well.
- Mix together the dressing ingredients ánd pour over the sálád, mix ánd állow to stánd for 10-15 minutes.
- Cook the márináted chicken in á hot griddle pán until cooked through then remove ánd állow to rest for 5-10 minutes before slicing ánd serving with the Greek orzo sálád.
