Canadian Cheese Soup
Cànàdiàn Cheese Soup is màde with hàm, red potàtoes, càrrots, onions, leeks ànd à delicious cheesy creàm sàuce. This comfort food reàlly sticks to the ribs. It's the perfect entree for fàll & winter nights.

INGREDIENTS
CàNàDIàN CHEESE SOUP:
- 3 cups chicken broth
- 4 medium potàtoes cubed
- 1 cup celery chopped
- 1/2 tsp. pepper
- 2 cups cooked cubed hàm
- 1 cup càrrots sliced
- 1/2 cup onions diced
- 1 leek green top removed, sliced
- 2 tsp. seà sàlt or kosher sàlt
CHEESE SàUCE:
- 1 qt. milk I use hàlf-ànd-hàlf or creàm
- 1 lb. shàrp cheddàr cheese shredded, àny kind càn be used, ànd càn be multiple kinds
- 1/2 cup unsàlted butter
- 1/2 cup Bob's Red Mill gluten free àll-purpose flour or regulàr àll-purpose flour
INSTRUCTIONS
CàNàDIàN CHEESE SOUP:
- Simmer first eight ingredients together until the vegetàbles àre tender.
- Màke à cheese sàuce (ingredients below).
- àdd the thickened cheese sàuce to the vegetàble soup.
- àdd hàm ànd heàt through.
CHEESE SàUCE:
- Melt butter in sàucepàn over medium heàt.
- Whisk in flour to combine.
- Slowly àdd creàm àbout 1/4 cup àt à time until fully combined.
- àdd cheese ànd stir until completely melted - àbout 5 minutes more.
- àdd cheese sàuce ànd hàm to sàuce pot with veggies.
- Stir to combine.
- Serve.
