Baked Garlic Pretzel Chicken

Yields: 2 servings
Ingredients
  • Cooking spray
  • 1 tablespoon olive oil
  • 1 egg, lightly beaten
  • 1-2 garlic cloves, minced
  • 1 cup pretzels, crushed
  • 2 tablespoons Parmesan cheese
  • ¼ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1 teaspoon dried basil
  • crushed red pepper to taste
  • 2 4-5 ounce boneless, skinless chicken breasts
  • Salt and pepper, to taste
Instructions
  1. Preheat oven to 425 degrees. Line a rimmed baking sheet with foil and spray with cooking spray.
  2. In a shallow bowl, combine oil,egg and garlic.
  3. In a separate bowl, combine pretzels, cheese, garlic powder, onion powder and basil. Add crushed red pepper to taste.
  4. Season chicken with salt and pepper as desired. Dip chicken in oil mixture and then in pretzel mixture. Place coated chicken on prepared baking sheet. Repeat. Top with any remaining pretzel mixture and lightly spray tops with cooking spray.
  5. Spray tops of chicken lightly with cooking spray. Bake for 15-18 minutes, until pretzel coating is browned and chicken is thoroughly cooked. Serve immediately.
